S E A B A S S P A R C E L | Eat with Ames.

If you read my Simple Sundays post then you will know Els and I are not ones for a roast on a Sunday, simply because we do not have a dishwasher and the mess that comes with a roast is unbelievable. So here is another super simple dinner for any night of the week that makes minimal mess and takes no time at all to make.

This can be made with any fish,meat or veg, there really are no rules that come with this meal which is why it’s so great. This recipe is inspired by yet again one of my favourite cook books Get The Glow by Madeleine Shaw and is soo yummy!

The ingredients we chose to use are: Sea bass, Cauliflower[blitzed to make a rice consistency], Ginger, Soy sauce, Spring onions, Turmeric, Pak Choi, Cherry tomatoes and 2 limes.

Start by rubbing the fish with ginger and soy sauce[amount dependant on your personal preference]. Add the spring onions into a pan and stir fry for a few minutes, then add the turmeric and cauliflower rice, stir until the rice is coloured and then take it off the heat. Grab your rectangle of baking paper and add a small amount of oil. Add the Cauliflower rice, pak choi and tomatoes[halved] and then place the fish gently on top and wrap it up like a parcel with baking string. Season with salt and pepper and squeeze one lime on top. Do this for each person and then cook for 15-20mins or until the fish is cooked through. We also add new potatoes on the side for a more substantial meal and there we have it a super quick and easy dinner for everyone and anyone.
